The information on the internal structure of rice grains has been studied and analyzed. Based on the obtained and analyzed data, the processes of heat and mass transfer occurring within rice grains have been calculated. The influence of the parameters of heat and mass transfer processes on the drying process has been analyzed, and temperature regimes for conducting the drying process have been recommended.
